Soy Walnut "Croutons"
1 cup Walnuts
1 to 2 Tbsp. Soy Sauce (This is a matter of personal taste - the more soy you add, the "saltier" the walnuts will be)
1/4 tsp. Garlic Powder
If time permits, walnuts may be boiled for one minute and then drained to make the soy sauce coat more evenly. Simply toss the walnuts in the soy sauce until they are well coated. Sprinkle the garlic powder on and stir. Toast in a 350 oven or microwave for 6 to 8 minutes, turning once. These walnuts are wonderful on top of any green salad, served with a balsamic vinegar or creamy ranch dressing.
1st Place Walnut Rum Cake
CAKE:
1 cup chopped walnuts
1 pkg. yellow cake mix
1 pkg. vanilla instant pudding
4 eggs
1/2 cup cold water
1/2 cup oil
1/2 cup dark rum
Preheat oven to 325 deg. Grease and flour bundt or angel food cake pan. Sprinkle nuts over bottom of pan. Mix the rest of the cake ingredients in mixing bowl and pour into pan. Bake one hour. Let cool completely in pan and then invert onto a serving plate. Poke holes in top of cake. Drizzle some glaze over top and sides of cake. Let absorb and repeat until all of the glaze is gone.
GLAZE:
4 T butter
1/8 cup water
1/2 cup sugar
1/4 cup dark rum
Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum.
Roasted In-Shell Walnuts
To roast walnuts in the shell, simply place clean walnuts on a baking sheet and place in a 350 oven. Turn walnuts over occasionally and bake for 10 minutes. Serve warm for best flavor.
Crisp Sugared Walnuts ( lightly coated walnuts)
4 cups water
2 cups walnuts
6 tbsp. sugar
1/4 tsp. salt
1 tbsp. oil
Preheat oven to 325 F. Bring a pot of water to a full boil. Add walnuts, remove from heat and set aside for 3 minutes. Drain walnuts and pat dry. While nuts are hot, toss evenly with sugar and salt to coat. Add oil and mix thoroughly. Spread on a foil-lined baking sheet. Allow the nuts to dry for an hour or until thoroughly dry. Bake, stirring occasionally, for 10 minutes or until crispy. Makes 2 cups.
Cinnamon Sugared Walnuts
1 cup brown sugar, firmly packed
1/4 tsp. salt
1 tsp. cinnamon
6 Tbsp. milk
1 tsp. vanilla
3 cups walnuts, halves & pieces
Combine first four ingredients in a saucepan. Cook over medium heat, stirring constantly until temperature reaches 236 degrees or until a little of mixture, dropped in cold water, forms a soft ball. Remove from heat and add vanilla and walnuts. Stir until sugary. Spread on waxed paper, separating nuts. Makes about 3/4 pounds.
Chewy Walnut Bars
1 egg, beaten until foamy
Beat in:
1 cup firmly packed brown sugar
1 tsp. vanilla
Sift together and stir in:
1/2 cup flour
1/2 tsp. salt
1/8 tsp. baking soda
Mix in:
1 cup walnuts, cut into large pieces
Spread in well-greased 8" square pan. Bake in 350 oven about 25 to 30 minutes or until top has a dull crust. (It will puff up during baking, then slump back down when about done. To be chewy like a brownie, take out of the oven when they still have a slight moistness on the end of a toothpick.) Cut into squares while still quite warm, cool, then remove from pan. Store in air tight container to keep them chewy.
Saucy Stir-Fry Chicken with Walnuts and Noodles
1 cup walnuts
2 cups chicken, cut into chunks or thin slices
1 clove garlic, minced or garlic powder to taste
1 medium onion, chopped
2 stalks celery, chopped
1 cup Chinese pea pods
8 oz. mushrooms, sliced
1 tsp. olive oil or no-stick cooking spray
Sauce:
1/4 cup dry white wine
1/2 cup chicken broth
2 tsp. cornstarch
salt and pepper to taste
1 lb. thin spaghetti noodles, cooked and drained
Roast walnuts in microwave or 350 oven for 4 to 6 minutes, stirring once after three minutes. Set aside.
Stir-fry chicken and vegetables in oil-coated pan for 5 to 10 minutes or until chicken is brown and vegetables are done the way you like them. Add sauce ingredients to the pan, stirring constantly, until sauce thickens. Place cooked noodles in serving dish and pour chicken and vegetables over the noodles. Top with roasted walnuts just before serving.
Serves 4
Walnut Apple Crumble
5 cups thinly sliced tart apples
2 Tbsp. lemon juice
1/4 cup water
1/2 cup flour
1/2 cup rolled oats
1 cup packed brown sugar
1 tsp. nutmeg
dash salt
1/2 cup butter or margarine, softened
1 cup coarsely shopped walnuts
Toss apples with lemon juice and water in shallow 2-quart baking dish. In large bowl combine flour, oats, sugar, nutmeg and salt. Mix to blend thoroughly. With pastry blender cut in butter until mixture resembles coarse crumbs. Mix in walnuts. Crumble over apples to cover completely. Do not pack down. Bake in 350 degree oven 40 to 45 minutes until top is lightly browned. Serve warm or at room temperature. Accompany with ice cream or pour cream, if you wish. Makes 6 servings.
Walnut Oatmeal Burgers
2 eggs
1 cup rolled oats
1 cup chopped walnuts
1/4 cup evaporated milk
1 medium onion, minced
Sage to taste
Salt or soy sauce to taste
Beat eggs and combine all other ingredients with them. Drop from spoon to form small patties and brown on both sides in hot oil. For burgers use without gravy. For casserole, cover with brown gravy and simmer 45 min. on top of stove or in oven.
Approximate yield: 10 small patties
